A reliable recipe for real life
Marble cake gives you the best of both worlds: a tender vanilla crumb and ribbons of cocoa in every slice. The pattern looks impressive, but it comes from one easy batter and a few relaxed swirls with a knife.
This version comes directly from the Meals of Yum kitchen. Serve it once cooled with tea, coffee, cold milk, or a scoop of ice cream for an easy after-dinner treat.

What you’ll need
Simple ingredients do their best work when each one has a clear purpose. The exact quantities and adjustable measurements are in the recipe card below.
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup butter, melted
- 1 tsp vanilla extract
- 1 cup milk
- 2 tbsp cocoa powder
How to make marble cake
Here’s the method at a glance. Use the interactive recipe card for the complete quantities and checkable cooking instructions.
- 01Prepare the pan
Preheat the oven to 160°C / 320°F. Line a baking pan with parchment paper, lightly oil it, and set aside.
- 02Mix the dry ingredients
Sift the flour, baking powder, and sugar into a large mixing bowl.
- 03Melt the butter
Melt the butter gently over medium-low heat, then let it cool slightly.
- 04Cream the wet mixture
Beat the eggs and melted butter with an electric mixer until creamy. Scrape down the bowl, then gradually beat in the vanilla and milk.
- 05Make the batter
Add the flour mixture and mix only until combined. Avoid overmixing so the cake stays tender.
- 06Make the chocolate batter
Transfer about 1 cup of the vanilla batter to a smaller bowl. Stir in the cocoa powder until smooth.
- 07Layer
Pour a layer of vanilla batter into the pan. Spoon chocolate batter over it, then add more vanilla batter. Repeat until both batters are used.
- 08Create the marble
Draw a knife or toothpick through the batter in loose curves. A few swirls are enough - do not completely blend the colors.
- 09Bake
Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean. If the top browns early, cover loosely with foil.
- 10Cool and serve
Cool in the pan briefly, then transfer to a wire rack. Slice once cooled and serve.
Recipe success tips
- ✓Bring the eggs and milk close to room temperature for a smoother batter.
- ✓Mix only until the last streaks of flour disappear.
- ✓Use broad, shallow swirls; too many passes will muddy the marble pattern.
Easy variations
Add finely grated orange zest to the vanilla batter for a bright chocolate-orange finish.
Dissolve a little instant espresso in the vanilla before mixing it into the cocoa portion.
Use the pan shape you prefer, but begin checking early because depth and material change the baking time.
Notes & storage
- The source recipe lists 160°C. Oven performance and pan dimensions vary, so use the clean-toothpick test as the final guide.
- Store covered at room temperature for up to 2 days or refrigerate for up to 4 days.
Frequently asked questions
Why did my marble pattern disappear?
The batters were probably swirled too much. Use only a few loose passes with a knife so the vanilla and cocoa layers stay distinct.
Can I make this cake without an electric mixer?
Yes. Use a sturdy whisk and make sure the eggs, butter, milk, and vanilla are fully combined before adding the dry ingredients.
How do I know when the cake is done?
The center should spring back lightly and a toothpick should come out clean or with a few dry crumbs.
